When practical experience from the bakery industry and technical innovation come together, a solution emerges that not only works but sets the standard for the future. In close collaboration with the Baker Team Service Technology of the Goedhart, Borgesius, and Het Huis van Bakkers bakery groups, ZELA developed a tiger paste dosing system that has since convincingly proven its value at multiple locations.

The foundation for this success was laid during an initial joint session in Aalsmeer. Johannes Papma, senior project engineer at Baker Team, and Peter Eversdijk from ZELA and EverBake sat down together to shape the concept. From that collaboration, the installation as it stands today grew step by step. This is how the ZELA tiger paste dosing system for the Borgesius Group came into being: a well-thought-out and powerful solution for industrial bakeries.

From idea to working installation
Johannes Papma: “We started with a pilot in Leeuwarden; that is where the first steps were taken.” That phase was crucial: “We have come a long way. In the beginning, things didn’t happen automatically, but through continuous adjustment and improvement, we now have something truly good.” According to Johannes, the installation distinguishes itself primarily on two points: accuracy and simplicity. “The system is low-maintenance, and we can dose the slurry very finely. As a result, we achieve much better and more consistent product quality.” We found the collaboration with ZELA and EverBake Group during the development of this system to be excellent. The result is a system ready for broad rollout, which we have already started.”

An important component is the integrated mixer. This allows the tiger paste to be produced continuously and in a controlled manner, ensuring stability in the process. “The continuity of our production has improved many times over. And for the people in production, the system is actually easier to use.”

From challenge to improvement in practice
At Bakkerij Borgesius Rotterdam, Tobias van der Linden, Product Manager at Borgesius Rotterdam, immediately saw the difference compared to the old situation. “Previously, the distribution of the tiger paste was simply not as good. It often sat crookedly on the bread or ran into the pan. We also lost points on that during inspections.”

With the new ZELA tiger paste dosing system, positioning in particular has improved significantly: “We can now determine very precisely where the paste lands on the bread. That really makes the difference in appearance and quality.” The production process itself has also changed. Whereas previously they worked with a stop moment and a side stopper, the line now remains in continuous motion: “Sensors determine exactly the right moment. As a result, the distribution is much more consistent.”

Fast start-up and ease of use
The implementation in Rotterdam went remarkably smoothly. Tobias: “We completed the initial start-up within half an hour. After that, there were a few minor optimizations, but it actually ran well right away.” Operators quickly mastered the system: “After working with it four or five times, they were already quite comfortable with it. The machine is simply very user-friendly.” This user-friendliness is also confirmed on the shop floor: “Everyone enjoys working with it.”

More stability in the process
Although production capacity has remained the same, there are clear operational benefits:

  • “Capacity has remained the same, but we have fewer downtimes and a much more stable process.” Additionally, the system makes it possible to flush intermittently during long production runs, which contributes to continuity.



Collaboration as the key to success
From both a technical and operational perspective, the collaboration with Bakkersteam Service Techniek and ZELA EverBake Group is perceived as very positive. Johannes: “There is good listening to each other and quick action. Together, we have achieved what we have now.” In Rotterdam, too, this collaboration was considered important during the start-up phase: “In collaboration with all parties, we dotted the i’s and crossed the t’s. That worked pleasantly and efficiently.”

A system that continues to grow
What makes this project particularly strong is the exchange of knowledge between the various bakeries within the group. “You learn from each other,” says Tobias. All bakeries receive the same basic installation: Johannes: “This allows you to easily exchange knowledge and parts between locations. That is a major advantage.”

With the further rollout to multiple branches, Borgesius is taking the next step in standardization and quality improvement. Johannes sums it up aptly: “We have created something we can be truly proud of. We make super beautiful tiger loaves with this ZELA tiger paste dosing system, he concludes.
